This is an older post, but I was thinking about it the other day when I let my children have cake for breakfast. I was tired, the baby was fussy, and it smelled so good just sitting there. Don’t judge me!!! lol For more shameful confessions, keep reading…

Anyone who knows me well (or reads my blog šŸ™‚ ) also knows that I genuinely enjoy cooking. I love baking goodies to share, decorating cupcakes with my daughter, whipping up delectable meals for my family to gobble up, and just all around fixing scrumptious vittles. What many of you don’t know is that there are times I just plain absolutely fall down on the job. I mean, I really go outside the realm of ordinary feeding of family and children. To call what I do during those times cooking would be…well….a disgrace to cooks everywhere.

Take tonight, for instance. The hubby is on duty at the fire station, and I was gone most of the day with the munchkins. To say that I didn’t want to be bothered with cooking tonight is an understatement. I could not, would not, did not even want to think aboutĀ bothering with it. I wanted to exercise for a few minutes while noone big enough to know how goofy I look bouncing around like a loon was here to watch. (I’m very much sick of the extra pudge in the tummy and thighs that’s still lingering from having my little Pumpkin, after years of being on the active side of life.) Guess what we had? Microwave maruchen noodles with a handful each of shredded baby spinach and pre-julienned carrots thrown in to make me feel like it was still a healthy dinner. While it microwaved and cooled, I did some of my old exercises & stretches with Princess Peach for the 15 minutes I would’ve probably spent throwing a simple dinner together. Winner, winner, what a dinner! šŸ˜‰

To delve even deeper into the dark secret slip-ups of a mommy who usually loves cooking and feeding her family heartily…brace yourself, people, ’cause this one is an even bigger doozie!

Sometimes- like, say, yesterday- when my daughter asks for a peanut butter and jelly sandwich for breakfast… *whispering guiltily* I let her. I know! Mom of the year here! Don’t give me that look! I was in a hurry, okay??

As if I haven’t already revealed enough of my lovely days of throwing in the towel ofĀ attempting to be something resemblingĀ Mrs. Handy Homemaker, there are also times when I throw together a bunch of chopped fruit and yogurt, then act really excited about it, and the kids & I have a fruit salad lunch that my sweet daughter thinks is a fruit party for princesses. Hey, at least this one is a healthy cheat! You’ve gotta give a girl credit for that!

So, now that you know some of my less-than-stellar moments of cookery, what are some of the things you do (or don’t do)Ā on those days you are just too busy, too lazy or just not in the mood to have to fix something for your family? Don’t leave me hanging here! I ‘fessed up. Dinner For a Dollar

“Dinner for a dollar?!?”Ā  they exclaim, “It can’t be done!!”.

Let me tell ya, honey, it most certainly can! Tonight I made this delicious pasta dish for less than a dollar. It fed my five year old, two year old and me with leftovers…and we all ate seconds!

I am challenging myself to stretch our grocery money as far as possible, and cook from the pantry as much as I can to help with a money crunch while my husband is taking a careerĀ furtheringĀ class for several weeks and missing a lot of work to do so. I haven’t been shopping in about a week and a half, so I am doing pretty well with it thus far.

I found some pasta with no crazy ingredients, just semolina and durum flour, marked down for 25 cents each whenĀ I was shopping a couple of weeks ago, so I grabbed several packages. I used half a pack of those noodles for this dish, plus a can of Italian diced tomatoes (66 cents), a sprinkling of parmesan,Ā a handful of mozzarella cheese and the last few slices of ham lunchmeat we had in the pack before we go grocery shopping tomorrow.

I mixed the cooked pasta with the tomatoes, letĀ my oldestĀ sprinkle on the cheese and the shredded lunchmeat and warmed it in the oven for about five minutes. TADA!!!! A super cheap and yummy supper created in less than 10 minutes! šŸ™‚

While this cost me less than a dollar, with more average prices it might cost closer to two dollars. Even still, it’s a budget friendly and speedily prepared meal for the penny pinching parent who is crunched for time.

Frugal Pies For Dinner and Dessert!

Today we have oodles of coupons to use to cook up two tasty, yet thrifty,Ā pies for dinner and dessert! I hope you like yourself some pie, because we're doubling up on it today! Pie for dinner...

ā€¢ā™¦ā€¢Italian Pot Pieā€¢ā™¦ā€¢

3/4 pound Bob Evans bulk sausage
1 (15 ounce) jar spaghetti sauce with mushrooms
1 (15 ounce) can cannellini beans, drained and rinsed
1/2 teaspoon dried thyme
1 1/2 cups Sargento or Kraft shredded mozzarella cheese
1 (8 ounce) package Pillsbury crescent roll dough, unrolled and divided into triangles

ā€¢Preheat oven to 425 degrees F (220 degrees C).
ā€¢Break sausage into an ovenproof skillet over medium heat; cook and stir, breaking the meat into small pieces as it cooks, until completely browned, about 10 minutes. Drain excess fat from the skillet.
ā€¢Stir spaghetti sauce, cannellini beans, and thyme through the drained sausage. Bring the mixture to a simmer; cook at a simmer until hot, about 5 minutes. Remove skillet from heat; stir cheese through the mixture until melted evenly throughout.
ā€¢Arrange crescent roll dough triangles atop the sausage mixture in a spiral pattern with points of dough toward the center, covering the sausage mixture completely.
ā€¢Bake in preheated oven until crust is golden brown and meat mixture is hot and bubbly, about 12 minutes.

...and pie for dessert!!

ā€¢ā™¦ā€¢Blueberry Cherry Pieā€¢ā™¦ā€¢

1 (15 ounce) package Pillsbury refrigerated pie crusts
1/2 cup white sugar
2 tablespoons cornstarch
1/4 teaspoon ground cinnamon
1 (21 ounce) can Lucky Leaf cherry pie filling
1 1/2 cups frozen blueberries
1 egg white
1 teaspoon water
2 teaspoons sugar

ā€¢Preheat the oven to 425 degrees F (220 degrees C).
ā€¢Press one of the pie crusts into a 9 inch pie plate.
ā€¢In a large bowl, stir together 1/2 cup of sugar, cornstarch and cinnamon. Stir in the cherry pie filling and blueberries. Spoon into the pie crust.
ā€¢Top with the second crust, and press the edges to seal. Flute edges, or press with the tines of a fork. In a cup, whisk together the egg white and water with a fork. Brush over the top of the pie, then sprinkle with 2 teaspoons of sugar.
ā€¢Bake for 45 to 55 minutes in the preheated oven, or until crust is golden brown. Cover the edges of the crust with aluminum foil if they appear to be getting too dark. Cool for at least 2 hours to allow the filling to set before serving.
