My husband is a firefighter paramedic who is also very active during his time off. He used to worry about losing, getting it caught up on a scene or damaging his wedding ring, so would often not wear it at all. Princess Peach and I love our s’mores, but there isn’t always a bonfire and roasting stick available, so I’ve come up with some creative ways to get that ooey-gooey yummy fix. One of my s’more inspired concoctions is S’more Cupcakes. Lemme tell ya, we gobbled these right up! Not to brag, but they were so moist, just gooey enough and the flavors were the bomb diggety. They were also alot of fun for Princess and I to make together, which helped make this a recipe to keep in the “make again” file. Want to make these yourself? You know that you do! Who doesn’t love s’mores?? They’re basically a symbol of summer, and they include chocolate! Oh, and don’t get me started on cupcakes! They just make me happy! They’re a pre-portioned piece of cake and they bring back fond memories of childhood with every bite. Put those together, and you’ve got Heaven in your mouth! 🙂 On to the directions…

S’more Cupcakes

1 Devil’s Food Cake mix, following directions on box for mixing

12 large marshmallows (we used the ones made for s’mores, since they were flat)

1 cup mini marshmallows

1/2 cup of chocolate chips

Mix the cake batter according to directions, adding the chocolate chips. Fill each cup about 1/3 of the way with the cake batter. Drop three mini marshmallows in each cup. Finish filling the cups with the remaining batter to about 2/3 full. Bake in the oven according to the directions for cupcakes on your Devil’s Food Cake mix.

When you remove them from the oven, flip the oven to broil. Place your large marshmallows on top of each cupcake, then pop them back into the oven. Broil until they puff up and are very lightly browned, watching closely, since they will burn very quickly. Remove, cool, and enjoy!

My kiddos absolutely drooled over these, gobbling them right up. They had a blast with the process of making them together, as well. My daughter loved adding the chocolate chips to the batter and dropping in the marshmallows. Both of my munchkins were mesmerized by watching the marshmallows puff up in the oven. They were so excited to finally get to chomp into these scrumptious bites of gooey goodness! You’ve got to try them, too! There are even coupons available to go with this yummy recipe! See below…

Dinner For a Dollar

“Dinner for a dollar?!?”  they exclaim, “It can’t be done!!”.

Let me tell ya, honey, it most certainly can! Tonight I made this delicious pasta dish for less than a dollar. It fed my five year old, two year old and me with leftovers…and we all ate seconds!

I am challenging myself to stretch our grocery money as far as possible, and cook from the pantry as much as I can to help with a money crunch while my husband is taking a career furthering class for several weeks and missing a lot of work to do so. I haven’t been shopping in about a week and a half, so I am doing pretty well with it thus far.

I found some pasta with no crazy ingredients, just semolina and durum flour, marked down for 25 cents each when I was shopping a couple of weeks ago, so I grabbed several packages. I used half a pack of those noodles for this dish, plus a can of Italian diced tomatoes (66 cents), a sprinkling of parmesan, a handful of mozzarella cheese and the last few slices of ham lunchmeat we had in the pack before we go grocery shopping tomorrow.

I mixed the cooked pasta with the tomatoes, let my oldest sprinkle on the cheese and the shredded lunchmeat and warmed it in the oven for about five minutes. TADA!!!! A super cheap and yummy supper created in less than 10 minutes! 🙂

While this cost me less than a dollar, with more average prices it might cost closer to two dollars. Even still, it’s a budget friendly and speedily prepared meal for the penny pinching parent who is crunched for time.

Black Friday week savings are AMAZING at CVS!!! There are over 30 freebies, and I was able to score quite a few of them. It’s really easy compared to usual, since they’re mostly free even without any extra coupons. There are even more terrific deals than I’m sharing, if you want to do some research and scan ads, but this was what was simple for me to take advantage of with two less than patient planning and shopping companions. I riproaring tickled with my bounty as is! 🙂

I walked into CVS with $13 ECB leftover from a previous shopping trip. I paid $21.93 out of pocket, have $12 in Extra Care Bucks leftover, and still have a $12.99 rebate to send in. That being said, I am eventually going to be paid $3.06 for buying $135.40 worth of great stuff!! Can anybody give me a “WOOHOO!!!”?? LOL My four year old is not very cooperative with searching for sale items, so I had her hunting for things and toting a basket, all with the goal of earning a (free) pack of gum if she was helpful instead of acting up. Yes, she earned her gum. Yes, that is the part of the trip she bragged about the most. That and the fact that she believes we saved enough money in this shopping trip to buy her most desired gift for Christmas. 🙂

I was also able to get some bags of Christmas Reeses candy for pretty much free after their deals and stacking grocery & in store coupons. Supreme protein bars for the hubby were only about $1 each, which is less than 1/3 of the price, after in store coupons, Extra care bucks and a printed coupon. Sodas are 69 cents apiece, so I just threw a couple of those in. I wanted toothbrushes as stocking stuffers for the kiddos, and the Clifford ones you see were extremely cheap after in store coupon and Extra Care Bucks. The coupons on the protein bars and Reeses candy coupons are available on coupons.com and Swagbucks, as well.

In honor and appreciation of all former and current military and their families on Veteran’s Day, I thought I’d share a few of the well deserved freebies & discounts available just for the vets in celebration of their sacrifice and service. Please note that most will require a military ID or proof of former military service in order to be given, so have it ready when you go to claim your goodies. Some will give it to anyone wearing their uniform. I’d suggest that you call your local restaurant or store to see what proof of service they need before going. Share with your friends & family in the military, even if you can’t benefit from these deals. They deserve it! 🙂

I just ordered a couple of the free photo bargains available right now, and thought I’d share the joy. I’m always looking for free or extremely cheap deals on getting my kiddos’ adorable pictures printed, and I’m sure it is the same for most of us who like snapshots of memories.

Walgreens has a free 8X10 photo collage you can order with the code BOOCOLLAGE. You can pick it up in your local Walgreens for free. I order these every time this deal is available, and they always turn out beautifully. This time I got one made of my two little ones in their costumes for a trunk or treat last night. The code expires 11-02-2013.

Shuttefly has 101 free prints, but you do have to pay shipping. I was able to use the code on 99 prints, which saved significantly on the shipping costs (they go up at 100 prints). It cost me $6.49, tax included, and they will be shipped right to my house. The code is SPOOKY. It expires 11-01-13, so hurry to get this great bargain!

Happy Birthday Freebies!!

Three out of five members of our family have birthdays coming up in the next three weeks, and I’m already seeing some of the fun free stuff we are going to get in this year. There are alot of birthday freebies out there, and many of them have perks all year long. I’ve seen alot of them, but haven’t take advantage of them all. Some are not in my area, others I’m not interested in, some I just wouldn’t use. Let’s face it. Sometimes we all want a warm, healthy breakfast that won’t break the bank, but we’re either too busy or too lazy to take the time to cook it up. This recipe is perfect for that kind of morning! It is one of my favorite super simple breakfasts to make when my hubby is working and my kiddos just want cereal or fruit. I came up with this while I was pregnant with my son. I needed to eat healthily even when alone with my toddler, but was unable to stand for more than a few minutes to cook without complications. I was also craving spinach morning, noon and night. This Cheesy Spinach Breakfast Burrito hit the spot! You can also use the same ingredients, multiply it by the ammount of burritos you need, and just cook it stove top like scrambled eggs. When I do that, I add sliced fresh mushrooms, since they cook better in the pan. (They’re good in the microwave, too, just slice thin.) If you’re like me, and want to keep it simple and snappy in the mornings, this is a meal for you! It literally is completely done, from opening the fridge to that first yummy bite, in less than five minutes. There are also some great coupons to go along with it this week. You can’t beat that! 🙂

How to make it…

Cheesy Spinach Breakfast Burrito

1 cup fresh spinach, torn or cut into smaller pieces

1 egg

1/3 cup shredded mozarella cheese

1 flour tortilla

1 Tbsp. sour cream

Spray a microwave safe bowl with cooking spray.

Place spinach, egg and cheese in the bowl.

Stir with a fork until everything is well mixed.

Microwave for one minute.

Stir contents.

Place tortilla on top of bowl and return to microwave for 15 seconds.

Spread the sour cream on the middle of the tortilla.

Dump the rest of the ingredients in the tortilla and fold like any other burrito.

Gobble it up and head into your day well fueled!

As someone who is addicted to both cheese and spinach, and loves Mexican food, this is a fantastic recipe! I’ve been a lifelong lover of cheese, but spinach has become a consistent craving for me ever since I got pregnant with my now one year old son. Weird, random, but true, especially since I was barely a mediocre fan of all things green and leafy until then. I’m drooling right now just thinking about these Cheesy Spinach Enchiladas! I want these right now, seriously! This is an awesome meal for a vegetarian or someone like me who can do without meat easily…or the guy whose wife can sneak in a meat-free meal when there’s enough cheese and sauce involved. 😉 It’s also very inexpensive, so who can complain about this one? If you’ve got someone who can’t do without meat at even one meal, just add a sprinkling of shredded chicken to each enchilada (or just his), so everyone will be happy. If you want to double the recipe and freeze one before you finish cooking, usually enchiladas freeze well, although I can’t guarantee them, of course. There are also coupons available to go with this delicious dish, which makes an inexpensive dish even cheaper. Can we say woohoo here?? 🙂

~*~Cheesy Spinach Enchiladas~*~

1 Tbsp. butter
1/2 cup sliced green onions
2 cloves garlic, minced
1 (10 ounce) package frozen chopped spinach , thawed, drained and squeezed dry
1 cup ricotta cheese
1/2 cup sour cream
2 cups shredded Monterey Jack cheese
10 (6 inch) corn tortillas
1 (19 ounce) can enchilada sauce

Preheat the oven to 375 degrees F.

Melt butter in a pan over medium heat. Add garlic and onion; cook for a few minutes until fragrant, but not brown. Stir in spinach, and cook about 5 more minutes. Remove from heat, and mix in ricotta cheese, sour cream, and 1 cup of Monterey Jack cheese.

In a skillet over medium heat, warm tortillas one at a time until flexible, about 15 seconds. Spoon about 1/4 cup of the spinach mixture onto the center of each tortilla. Roll up, and place seam side down in a 9×13 inch baking dish. Pour enchilada sauce over the top, and sprinkle with the remaining cup of Monterey Jack.

Bake for 15 to 20 minutes in the preheated oven, until sauce is bubbling and cheese is lightly browned at the edges.

I’m in love with this recipe, but I have a meat addict for a hubby, so I’d probably have to add some shredded chicken to mine, or at least make some beans with it. Does anyone else have a meat junkie in their household? Did anyone else crave something during pregnancy, and never lose the newfound love for a food which wasn’t a favorite before? My weakness is cheese. I could live as a vegetarian, if necessary, but being vegan would probably send me into withdrawals. 🙂
