Chocolate Chip Cookie Cups!

I just spent a good part of the afternoon putting plants out in our little yard garden. It’s warm outside, and the pollen count is at an ungodly high level. I would love to eat icecream right now, since I got quite warm & dusty and my throat is pretty itchy from that pesky yellow haze covering everything outside. I’m being a good girl and resisting temptation for the moment, but I’m sharing a tempting recipe that might make it difficult for y’all to keep from indulging. πŸ™‚ What I’m sharing today is a frugal tip for fancifying that delectably cool warm weather treat: Homemade cookie cups filled with icecream. Mmm, mmmmmmm!!! πŸ™‚ I’ve got savings to go along with it, which certainly sweetens the deal for me! πŸ™‚

What you need: Cookie dough and a muffin tin, plus whatever you want to fill them with. I have always seen chocolate chip cookie dough used, but I’m sure other types would work and would like to try some other varieties this warm season.

What to do: Flip the muffin tin over, form the cookie dough around the cups instead of inside, then bake the pan upside down like that. Let the cookies cool, then pop them off of there and fill them with icecream or frozen yogurt of your choice, or even fresh chopped fruit with whipped cream on top, if you prefer.

Some flavor combinations that I think would be good to try: The classic chocolate chip cookies with vanilla, chocolate or peanut butter icecream. Chocolate chocolate chip cookies with peanut butter or strawberry icecream. Peanut butter cookies with chocolate icecream. Sugar cookies with strawberry icecream or fresh fruit & whipped cream. Your imagination is your limit! πŸ™‚

It’s a beautiful spring day here in Georgia, and wonderful weather for a picnic! With this in mind, I’ve gotten together a perfect picnic for pennies on the dollar. Not only is this a cheap menu, but it is both a simple and unique twist on classic picnic foods. We’ve got a main dish, side and dessert, all very easy to throw together and equally easy on your pockets!

A healthier version of corn dogs…

Quick & Crunchy Hot Dogs

1/2 cup ketchup

1/4 cup prepared yellow mustard

1 cup cornflake crumbs (Total cereal may work, and it has a coupon)

1 (16 ounce) package all-beef Ball Park hot dogs

1.Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with a sheet of aluminum foil.

2.Stir together ketchup and mustard on a plate until mixed. Place cornflake crumbs in a shallow bowl. Roll each hot dog in the ketchup mixture, then roll in cornflake crumbs to coat. Place on prepared baking sheet.

3.Bake in preheated oven until the hot dogs are hot on the inside, and crispy on the outside, about 15 to 20 minutes.

An unusual side dish…

Awesome Brown Rice Salad

2 cups water

1 cup Hinode brown rice

1/4 cup diced red onion

1/2 cup diced celery

1/4 cup dried cranberries

1/2 cup balsamic vinaigrette salad dressing

1 tablespoon sugar

1.In a saucepan, bring water to a boil. Stir in rice, cover, and reduce heat to low. Simmer for 45 to 60 minutes, or until done (or use instant brown rice for quicker results).

2.Transfer rice to a serving bowl, and stir in onion, celery, cranberries, salad dressing and sugar. Cover, refrigerate, and serve cold.

And for dessert…

S’mores!

There is a rare coupon covering the three basic s’more ingredients- marshmallow, chocolate and graham crackers.

You can make them over a fire in the usual way. If it a backyard picnic, though, you can also put them together (without the top graham cracker) on a baking sheet and broil them until they are lightly browned and all puffed up, then just slap the top graham cracker on when you pull them out of the oven. Either way is a delectably gooey sweet treat to top off a nice spring picnic! πŸ™‚

Yesterday was one of my occasional “coupon sprees” at CVS.

My tallies came up pretty dandy! As I’ve stated before, I don’t have the time or patience to “extreme coupon” with two small children, but my savings percentages were in that league. All I did was spend a few minutes scanning the deals online, printing out my matchingΒ coupons online,Β grabbing the coupons I already had clipped that went with the deal, loading my deals fromΒ my CVS club emails and folding it all into the CVS flier from theΒ Sunday paper. If you aren’t signed up for the emails, do it! I get special deals almost weekly for 20% or 30% percent off or $5 off of a $30 or other similar discounts on top of coupons, sales and Extra Care Bucks. Annnnyway… on to the details of my awesome score! πŸ™‚

My total (between two transactions) would have been $123.33.

My out of pocket expense was $13.81.

That’s a savings of $109.52, or 88.8%!!! πŸ™‚

I’m not even counting into this equation the fact that I have $5 in Extra Care Bucks to use on my next transaction, so I’m more than pleased. I’m especially pleased because most of the items are things we use alot of, and not just “extras”. See the diapers? Yeah, buddy!!! πŸ˜‰

Paid to Purchase Haircolor!

I recently made a quick run to CVS to pick up a prescription. While in the store, I saw that alot of the L’Oreal haircolor products were marked down to 75% off. This turned out to be a “paid to purchase” deal for me, which is my favorite kind of shopping! I got four boxes of L’Oreal haircolor, used two “$5 off of 2” coupons and was given $2 by SavingStar (see my post on SavingStar here: https://pennypinchingpeach.com/2013/02/07/savingstar/) just for buying one of their current products! It pays to keep your coupons with you whenever you are going shopping, especially on items you either use regularly or know there are frequent sales or markdowns on. I know that anything health and beauty related is going to be on sale or put on clearance on a regular basis, so that is a category of coupons I make sure to keep a supply of in my purse. Β‘Hola! Let me tell you, not only are these some mouthwatering Mexican dishes, but they are loadedΒ chock full ofΒ savings. I’ve got six- yes, count ’em, people- six coupons to go with this delicious budget dinner! I can see a fun Mexican dinner night in my family’s future this week, with this kind of savings to tick off on such a yummalicious menu. Read this twosome of toothsome recipes with a napkin handy to wipe up the drool, and keep it on hand for the salivating over the savings at the end! πŸ™‚

Drool over these dishes, y’all!

♦Chicken Chilaquiles♦

1/4 pound chorizo
2 skinless, boneless chicken breast halves, cut into 1-inch cubes
1/2 (10 ounce) bag tortilla chips
1 cup frozen corn kernels
1 (19 ounce) can green enchilada sauce
1/2 cup sour cream
2 cups shredded Monterey Jack cheese

Preheat an oven to 400 degrees F (200 degrees C).
Cook the chorizo in a skillet over medium heat, stirring to break it into tiny pieces. Place the raw chicken into the skillet with the chorizo; cook and stir the meats together until the chicken is no longer pink in the center, about 10 minutes.
Spread half of the tortilla chips over the bottom of a casserole dish; top the chips with the cooked chorizo and chicken mixture. Sprinkle the corn evenly over the meats and layer the remaining chips over the top. Whisk together the green enchilada sauce and sour cream in a mixing bowl; pour over the top of the casserole. Top the casserole with the shredded Monterey Jack cheese.
Bake the chilaquiles in the preheated oven until the casserole is bubbly and the chips begin to brown, 15 to 20 minutes.

♦Mexican Red Rice♦

2 Roma (plum tomatoes), cored
2 tablespoons vegetable oil
1 cup minced onion
2 cloves garlic, minced
1 cup uncooked long-grain white rice
1 3/4 cups low-sodium chicken broth
1/4 cup canned tomato sauce
1 jalapeno pepper, chopped
2 sprigs fresh cilantro
Salt to taste

Grate tomatoes into a bowl using a box grater; discard skins.
Heat vegetable oil in a heavy skillet over medium-high heat and cook onion until translucent, stirring often, about 5 minutes. Stir garlic into onion and cook until fragrant, about a minute.
Stir rice into onion mixture and cook, stirring often, until rice is lightly toasted, about 3 minutes.
Stir grated tomato, chicken broth, and tomato sauce into the rice, bringing the mixture to a boil.
Mix in jalapeno pepper, cilantro, and salt; reduce heat to low. Cover skillet and simmer until rice has absorbed the liquid, about 15 minutes. Do not lift the cover while the rice is cooking.
Turn off heat and let rice stand covered for 8 minutes. Fluff with fork before moving rice to a serving dish.

I love the kind of meal you can throw together all in one dish. It means less clean-up and it’s easier to keep an eye on one dish while watching my munchkins destroy the housecleaning I just finished than it is to babysit multiple fancy dishes. I can do it, but the headache is sometimes not worth it or I just plain don’t have time to do that and everything else I’ve got going on. With a nice coupon available right now for sausage, and taters always being cheap, this Sausage Potato Dinner in a Dish fits right in with my laidback frugal mommy vibe. My family also has a super duper sweet tooth, so if I find a simple dessert that uses ingredients I usually have on hand, I’m tickled pink. With strawberries being in season right now, they are always in my fridge, so the Strawberry Yogurt Pastries were perfect for this time of year!

I’m putting the savings information after the recipes. There are double savings this time, which makes this a really sweet deal! πŸ˜‰

Sausage Potato Dinner in a Dish

4 small red potatoes, cubed
2 small zucchinis, cut into 1/4-inch slices
1/2 small onion, diced
1/2 teaspoon garlic salt
2 tablespoons butter
1 pound Hillshire Farms smoked sausage, cut into 1/2-inch slices
1/2 cup grated Parmesan cheese, divided
1/4 teaspoon pepper

*Place potatoes in a small saucepan and cover with water. Bring to a boil. Reduce heat; cover and cook for 15-20 minutes or until tender.
*Meanwhile, sprinkle zucchini & onion with garlic salt. In a small skillet, stir-fry zucchini in butter until crisp-tender. Add sausage; cook until browned.
*Drain potatoes; add to skillet. Sprinkle with 2 tablespoons Parmesan cheese and pepper; heat through. Sprinkle with remaining cheese.
*Yield: 4 servings.

Strawberry Yogurt Pastries

1 tube (8 ounces) refrigerated Pillsbury crescent rolls
1 1/2 cups (12 ounces) Yoplait strawberry yogurt
1 1/3 cups strawberries, halved

*On a baking sheet coated with cooking spray, separate crescent dough intoΒ 4 rectangles; seal perforations.

*Bake at 375Β° for 6-8 minutes or until golden brown.

*Cool on a wire rack. Spread yogurt on each pastry; top with strawberries. Serve immediately.

*Yield: 4Β servings.

If you’re the parent of a diapered darling, you know that the the little stinker is going to to keeping doodying in those diapers and you’re going to have to keep wiping those bottoms. Unless you are one of those brave (and commendable) souls who ventures into the world of cloth diapers and reusable wipes, it’s an inevitable part of parenting a small, drooly being. They are going to poop & pee and you’re going to keep buying something for them to stinky up over & over & over &….well, you get the picture. πŸ™‚ I have a few simple strategies which have kept me rarely buying full price diapers or wipes, and have saved us a truckload of money.

First of all, sign up with all of the diaper makers for their email lists or clubs or whatever they have available. They will often mail, email or post on their sites very high value coupons to get you to continue buying their products. Huggies and Pampers also have rewards programs you can use to earn different things. I’ll probably write more about those another day. πŸ™‚

Secondly, check the online printable coupon sites at least once a week, and print any coupons for diapers and wipes they have available. They will usually let you print them at least twice, so try to do that. Keep these coupons in your purse all the time, in case you run across a real bargain you can stack the coupons on top of. One site that frequently has baby product coupons is http://coupons.com

Third, sign up for store loyalty cards, and don’t forget to use them. They track what you buy, and since you are obviously buying diapers & wipes, they will often wind up giving you coupons for those items to keep you buying them in their stores. Many stores, like CVS and Walgreens, will allow you to “stack” their store coupons on top of a manufacturer’s coupon, which makes for some great bargains.

Fourth & finally, never wait until you actually need bottom wipers or poopy catchers to buy them. If you do, you’re probably not going to get the best deals or even close! Always stay ahead. Buy them when they are on sale and you have coupons to help pay for them. It’s easy to check when you’re already shopping or glance online briefly before you head to the store and see if there’s a good sale going on.

See? All of that is super duper easy, and hardly takes a few minutes each week. The pay-off is huge when you compare it to the time you put into it, too! I rarely pay more than half price for diapers and the wipes are usually deeply discounted, as well. Just by spending a few minutes a week on this, and only counting these two items, I would estimate that I save at approximately $60 to $70 a month. If you count that like wages, I’m making pretty good money for my time! πŸ˜‰

If you’re like me,Β  a slow cooker is your best friend! I received a slow cooker (aka crockpot) as a wedding present. We Β use it soΒ frequently that it never gets put up in the pantry with all of my other bulky kitchen gadgets, unless we are prettifying the house for company. Since I’m not only busy, but habitually frugal, I love finding delicious dinners that can be quickly thrown together in the crockpot and hardly cost a thing. That kind of meal makes me happy on many levels! It satisfies my love of all things yummy, simplifies my life, and keeps my purse a little fuller. What more could a girl ask for?

This recipe is super simple and should be a hit with adults and kiddos alike. Are you ready for this? It is Slow Cooker Pizza!! On the count of three, we all say “YUM!!!” 1, 2, 3….YUM!!! Okay, now that I’ve gotten that out of my system… πŸ˜‰

There are a few coupons available for the ingredients in this recipe, so that spices things up a bit, too. Link and savings will be after the recipe…

~Slow Cooker Pizza~

1 1/2 lbs. ground beef (we use ground deer or turkey as a substitute for ground beef)

1 (8 ounce) package rigatoni (or other shaped) pasta

1 (16 ounce) package Kraft shredded mozarella

1 can Campbell’s condensed cream of tomato soup

2 (14 ounce) jars pizza sauce

1 (8 ounce) package Hormel pepperoni

Veggies of choice (i.e mushrooms, peppers, onions)

*Bring a large pot of lightly salted water to a boil. Add pasta and cookΒ about 8-10 minutes, Β until al dente; drain and set aside.

*Brown the ground beef over medium-high heat. Drain off grease.

*In slow cooker, alternate layers of ground beef, noodles, cheese, soup, sauce, pepperoni and any veggies you chose to add.

*Cook on Low setting for 4 hours.

Total number of coupons for this menu: 3, but I added Sargento cheese to the list to print because I didn’t see the Kraft one there when I went to publish, so it shows 4.

Now go print ’em, redeem ’em, cook it up and enjoy!

So, I’ve made it clear that I am by no means an extreme couponer. This little mommy doesn’t have the time for it! πŸ™‚ I honestly didn’t plan out today’s trip at all, other than making a list of things I needed and taking my coupons with me. Normally I’m much more prepared, but I was busy the past few days and just trying to get out of here with the munchkins this morning.

The above photo is today’s haulΒ at CVS. I used a 25% off non-sale items, CVS coupons, in-store sales, and manufacturer’s coupons. Since I don’t get things I won’t use or be able to quickly give away/donate, there are alot of deals I completely ignore, and I buy the things we really need whether it hurts my final tally or not. Anyway, today was not my best score by a long shot, but it wasn’t too shabby for an unplanned trip to CVS to get several things we were needing. πŸ™‚

Grand Total: $131.23
Total Spent: $51.63
Total Saved: $79.60
Savings Percentage: 60%

I also have $14.00 in Extra Care Bucks to spend for my next trip, since I didn’t have time to plan it out well enough to use them up during today’s transaction.

Since I was mostly buying things we really do need, and other things we’ll very much enjoy, I’m happy with that. Hopefully next time my savings percentages will be more “normal” for me, though. πŸ™‚
