November is Lung Cancer Awareness Month.

My mom- a previously healthy non-smoker- died of lung cancer just before Christmas in 2006  at the young age of 44, a whirlwind two months after her diagnosis. We don’t know what caused her disease, and still don’t understand how such a vibrant, healthy and active woman succumbed to it so rapidly. I’ve learned that dwelling on what cancer has taken from my family and what power it can have over us can be completely soul numbing. Instead of dwelling on what lung cancer can do and what it can rob from us…this month I want to remind myself and others of what lung cancer can’t do.

Lung cancer can steal your voice, but it cannot take the words you have spoken. Choose words of love, encouragement and peace.

Lung cancer can leech away your energy, but it can’t quench your spirit. My mom was still such a caring, curious person all the way to her last breath.

Lung cancer can stop your heart, but it cannot stop the love you have inside of it. Show that love to those you care for.

Lung cancer can zap the strength from your body, but it can’t touch the strength of your soul. Who you are is stronger than cancer.

Lung cancer can take away life from your loved one, but it can never, ever take away the memories, legacy and relationships you have. Those will live on long after you are gone, regardless of whether you are taken by cancer or die in your sleep at the ripe ol’ age of 105.

Cancer doesn’t always win even in the physical realm. Don’t think I am saying it has to take all of these physical things away….but it can. As long as there is light in the eyes and breath in the body, there is hope. There are so many things it cannot reach, though, and we all need to remember that. Don’t give lung cancer- or any cancer- that kind of power over you. That power belongs to us, as humans. The human spirit soars far above and beyond anywhere that any disease can reach.

Safely Flavored Drinks for Pregnant Mommies

If you’re like me, you need to drink a lot of water even when you aren’t pregnant. The amount of water I need to prevent dehydration during pregnancy feels like enough to float a boat on! Sometimes when I try just going with plain water all the time, I find myself dehydrated from forgetting to drink. I don’t want to drink a lot of unhealthy and/or fattening sodas, teas, fruit drinks and such, but flavoring my drinks periodically definitely helps me to drink more. I thought I’d share a few of my tricks for tasty sipping drinks for pregnancy while trying to stay safe. 🙂

Strongly flavored juices like cranberry grape juice, regular grape juice or any cranberry mixed real fruit juices make some terrific flavored waters! You can put about just a splash up to about 1/4, then filling your cup with juice, add a few cubes of ice, fill it up with water and you have a very refreshing drink to sip.

Some herbal teas are safe during pregnancy, such as Earth Mama Angel Baby Organic Mama-To-Be Tea Sampler 16 bag, Celebration Herbals Organic Red Raspberry Leaf Tea Caffeine Free — 24 Herbal Tea Bags
and Twinings Pure Peppermint Herbal Tea, 1.41 Ounce Box, but it may be wise to consult your physician before drinking anything out of the ordinary. Personally, I’m on a peppermint tea kick, or sometimes Lipton Green Tea, Decaffeinated, 20 count, (Pack of 6). I like it warm with just a bit of honey, or I make it like iced tea with a little sugar. Either way, it’s very refreshing! The iced tea version is my favorite, because it’s a great alternative to that Southern sweet tea for this Georgia girl, and keeps me from giving in to the temptation to pour a tall glass of the traditional sweet tea I keep in the fridge for my hubby.

Something I recently discovered is to let the frozen lemonade concentrate thaw and put it in a water bottle in the fridge. I don’t like to keep a huge pitcher in the fridge, but love the lemony flavor it can add to my water when I start slowing down on my intake of H2O. I just shake the bottle, add it a little at a time to a glass of ice water and stir until it has the desired taste. You can mix it lightly so it tastes more like lemon water or more heavily if you want actual lemonade. I’m sure this would work with other juice concentrates, as well.

You love food, I love food, we all love food! I mean, who can help it? We’ve all gotta eat! October 24th is an extra special day in the world of food. It’s not only the official celebration of Food Day, but also the birthday of one of my all-time favorite food lovers- my dear ol’ Dad! It’s only fitting that he was born on the day we celebrate one of his most beloved things (other than his darling children, of course! 😉 ). He sure loves himself some good vittles! Love you and a big happy birthday holler, Daddy!

Food Day isn’t just about any food. It’s about making an effort to eat real, healthy food and about the people who work hard to make sure these choices are readily available. It’s about encouraging families to choose more natural and less processed. According to http://www.foodday.org : In 2014, Food Day will have a special focus on food access and justice for food and farm workers.

I just finally got my late autumn garden of kale, broccoli and butter lettuce planted a couple of days ago to give us a continued supply of some fresh healthy green veggies for a couple more months while produce is getting more and more expensive. I wanted to plant spinach, too, but I waited too long to start the seeds and couldn’t find the plants anywhere locally. I’d love to have more in, but life interfered with my larger plans for this year. The only thing still producing well from my summer garden is the jalapenos you see pictured. This and That Infused Water

I’ve seen all sorts of blurbs online about this wonderful fad of making infused waters at home. Now, generally I’m not one to jump on the myriad bandwagons of fadhood, but in this case it seemed harmless. Since I need to drink a lot of water, love fruit, and always have mason jars floating around the house, I decided to give this particular fad a try. I have sampled a variety of different flavors, so I’ll tell y’all about it. Prepare yourself! 😉

My first test was blueberry lemon infused water. It was quite pretty, and made a truly refreshing beverage. I just sliced up a lemon, threw in a heaping handful of blueberries, filled my quart jar (better yet, try a Aladdin Original Insulated Mason Tumbler 20oz, Aqua
)with water, shook it up and stuck the whole concoction into the fridge overnight. When I tried it in the morning, it was a big thumbs up. I was able to refill using the same fruit four times over the course of two days. The fourth time the flavor was starting to fade, so I just ate the blueberries and called it good. 🙂

My next try was key lime. I quartered two key limes, squeezed them into the jar, and filled it up with water. I also added two tablespoons of sugar melted into some hot water, because I figured it would be way too tart and kinda icky on it’s own. I think I was right, but it would’ve been smarter healthwise if I had just used a tablespoon of honey or something. 🙂 It didn’t make it sweet at all, just cut the sour a bit. This one only worked for two refills, but may’ve worked for more and a stronger flavor with a large lime or more key limes. I liked the blueberry lemon better, but this still had a nice little zest.

My third flavor to check out was mango. I sliced up half of a mango into my jar, filled it with water and shook it, letting is sit overnight. It had a pleasant mellow mango flavor to it that lasted through a couple of refills. Try it!

My fourth tester to share was blackberries, since I’d just picked a big jug full of blackberries and wanted to see how it was. It came in a close second to the blueberry lemon on the taste test and the water color was a beautiful purple.

By this point, my sweet husband had taken note of my new fun water trick and bought me a really pretty fruit infusing water bottle off the clearance rack at Walmart, as seen in the photo. I love it! It made it so simple, and I could take it anywhere and keep adding water as it got about half empty throughout the day for continuous lightly fruity refreshment. Infusing water with the mason jars was great, but using the nifty little Cool Gear Flavor Infuser 28oz BPA Free-red* with the insert and the top that snaps shut so my kids can’t dump it all over me took it to the next level, honey! 🙂 (The fact it was on clearance added to his thoughtful hubby points. LOL)

My final creative flavor combination to share is cucumber and key lime together. I took a few thin slices of cucumbers and put them in the bottom half of my infuser insert in my Cool Gear Flavor Infuser 28oz BPA Free-red*, then quartered two key limes, squeezed them into the cup and threw the quarters into the infusion insert. Next morning, I had a drink best described as “fresh”. The flavor was surprisingly strong in a pleasant way. I’d thought of cucumber because I’d seen a few places that cucumber water could boost metabolism and aid in weight loss. Can’t hurt, huh? 😉

To sum it up, I’d definitely recommend doing your own infused waters of you like a little flavor in your beverages and are trying to drink more water. Don’t expect it to be as strong of a fruity taste as juice, but it is very pleasant and certainly makes me reach for my water a little more frequently than always drinking it plain. Adding a bit of citrus like lemon or lime to whatever fruit definitely seemed to amp up the flavor of the “host fruit”, from my little experiments. Play with the flavors. It’s fun! I’m thinking of trying pineapple or peaches next. What fruit would you try to infuse first?

Super Yummy Don’t-Tell-Them-They’re-Healthy Snacks

I decided to come up with healthier versions of premade snacks my kiddos can just open the fridge and get out when I’m in the middle of something.

My kiddos are always munching away, and often get hungry when I really don’t have time to make even a quick snack.  By the way, I actually do tell my kids when their food is healthy, because I want them to know they are eating well and still enjoy what they’re eating instead of thinking junk is better. It sounded cute, though. 😉

Here are a few of my ideas for quick and healthy snacks…

One idea I came up with for inexpensive premade snacks of the healthy variety is to chop up some veggies into little stick shapes, get some ranch dressing or other preferred veggie dip and put it all together in a two sided container. In this case, I used a KFC Go Cup, because it is about the right size and already divided into two sections for the two parts. I have a lot of cucumbers from the garden and carrots are cheap, so that was my choice for this particular cup. Some other suggestions would be celery sticks, cherry tomatoes, sugar pea, broccoli, cauliflower or baby carrots.

Using the same KFC Go Cup, or a similar divided container, such as these awesome Easylunchboxes 3-Compartment Bento Lunch Box Containers “Classic” (Set Of 4). Bpa-Free. Easy-Open Lids (Not Leakproof)
, try slicing apples or green grapes and making a dip of peanut butter and honey.

The above suggestions have to be refrigerated if not being used immediately, but the ideas below are good for a snack drawer or shelf the kids can free range graze. 🙂

In small sandwich baggies, put in handfuls of homemade snack mix. One that I tried recently was Taco Seasoned Chex Mix. It could be adapted with your own seasonings you’d normally use in tacos, I was just trying it following their recipe to start. I like that it has very little sugar (a small amount in the cereals) and is fairly filling.

Another sandwich bag filler is GORP: Good Old Raisins and Peanuts. I mix two parts each of raisins and peanuts with one part M&Ms or chocolate chips, and it is soooooo yummy! I wouldn’t call it a health food, but it will fulfill your kiddos’ junk food cravings without allowing them to completely binge on sugar.

You can whip up a batch of my Yummy Oatmeal Banana Healthified Cookies and put a couple in each baggie for a great quick and healthy snackeroo that will satisfy even a hungry hubby. 🙂

This premade healthy thing can be applied to simply putting various fruits, veggies or nuts into serving sized containers for your kids to grab at will. Children tend to eat what is easily accessed, just like adults, and it is up to the grownups in their lives to provide them with solid choices.

Freezing Your Own Cayenne Peppers!

I always I try to stretch a dollar while feeding my family with healthy foods is to keep a garden and put up what we won’t eat while fresh for later.

To be honest, I haven’t progressed to the point of having a humongous garden to provide limitless bounty to can for stocking a huge pantry of shelves I don’t yet have. I was raised doing it, but haven’t been able to do it myself yet as an adult on my own. This year I have a little semi raised bed measuring roughly 16′ by 3′, plus a few potted veggies. It won’t provide enough food to last us year round, but it does provide a large chunk of our produce for the spring and summer, plus a bit to put up for later.

Since I don’t get enough of anything at once to make a big batch of anything, I tend to freeze things more than canning. I can always can most things later if I get enough of something frozen and want to make a sauce or jelly or some such delicacy out of them. I froze bell peppers and cayenne peppers to use in cooking.

Preserving Your Own Bell Peppers!

Wash and seed peppers, then slice and lay out on cookie sheets. Pop them in the freezer just like that. This step keeps them from clumping together in a big mess in your freezer bags. I left them in for about an hour, then got them out and tossed them into labeled freezer bags. I squeezed out all the air I could before sealing, then laid them flat to freeze. They should keep like this for at least several months. I still have a couple of bags left from last August, and they are fine & dandy.
